
Color: star-bright and luminous, with an intense golden color and very fine and energetic bubbles.
Nose: very aromatic and open nose with notes of ripe bittersweet yellow apple, bruised and baked apple, yellow pear combined with a delicate scent of mushroom, leather and cider barn. Just a wisp of spiciness like clove. Quite complex nose.
Palate: great substance and sapidity on the attack with a mouthwatering acidity. Gentle bittersweet tannic texture and a very creamy mousse. Well-structured palate with density and ripeness showing bittersweet yellow apple, baked and bruised apple flavours as well. The aftertaste is dominated by notes of button mushroom, apple peel and delicate spice.
Comment: a very gastronomic cider. This could be a beautiful pairing with a roast of suckling pig in a sweet spice glaze served with a suckling pig jus and apple reduction, apple purée and butter-fried mushrooms.
