Color: clear, light ruby with slight tawny reflections. Nose: smoky and empyreumatic notes, a slight roasted character from the oak ageing, kirsch cherry, cassis and raspberry. Palate: clean attack, marked acidity, preserved raspberries. Delicate texture, well balanced. A touch of sweetness on the mid-palate. Long finish. Pairing: roasted beetroot with olive oil cream, cumin and rosemary. Comment: excellent, best served slightly chilled to soften the alcohol. Cellaring 3 years.
