A family estate located in Change, Burgundy, Domaine Claude Nouveau produces 30% white wines and 70% red wines in the Hautes Côtes de Beaune and Côte de Beaune regions.
Prioritizing quality over quantity, yields are limited by short pruning, debudding, and green harvesting. Plowing the vineyards, grass cover, and reasoned treatments enable the production of wines as naturally as possible, respecting the environment. The estate has been certified High Environmental Value Level 3 since August 2021.
The Chassagne-Montrachet 1er Cru Morgeot white 2022 cuvée, from a clay-limestone soil and 100% Chardonnay, benefits from manual harvesting, with traditional alcoholic fermentation for 12 to 15 days in oak barrels (30% new barrels). The wine is aged in oak barrels for 10 months, developing complex aromas.
Color: pale yellow, bright.
Nose: intense and structured, revealing a beautiful concentration with notes of white fruits, honey, and butter. Well-integrated oak ageing.
Palate: ample and round, with juicy flesh and a beautiful mineral length. Good tension with citrus notes.
Pairing: sautéed turbot steak with sesame.
Comment: a great wine in the pure tradition of Chassagne-Montrachet.
