
Nestled in the heart of the Muscadet Sèvre & Maine sur lie appellation, Château de l’Hyvernière crafts a cuvée that precisely expresses the identity of the Goulaine communal cru. Sourced from parcels located on a classified dome entirely facing the wetlands, the wine benefits from a long ageing on its lees, which shapes both its texture and amplitude. The name Goulaine itself refers to the landscape: derived from goule, meaning “neck” or “bottleneck”, it evokes the runoff waters flowing naturally toward the surrounding marshlands.
The cuvée comes from a rigorous selection of vines rooted in light soils of gneiss, micaschist and granitic inclusions, all contributing freshness and minerality. Single Guyot pruning limits yields to six to nine bunches per vine, while soil management and the bioprotection of the harvest help preserve aromatic purity by reducing the need for sulphur.
Vinification is meticulous and fruit-focused: cold skin maceration for at least two days, controlled fermentation at 16°C, and no malolactic fermentation to maintain the wine’s natural tension. Ageing on fine lees for 24 months takes place Galiléo spherical concrete vats and stainless-steel tanks, which protect the wine from oxidation, with regular bâtonnage to bring greater complexity and depth”.

Color: pale straw-yellow and crystal clear.
Nose: intense and complex, with subtle mineral tones, white fruits (pear, vineyard peach) and white flowers. A beautifully expressive aromatic profile.
Palate: generous and silky, with ample texture, a long finish and a distinctly saline persistence.
Pairing: a great gastronomic Muscadet built to age, ideal with roasted turbot, shellfish or well-aged Comté.
Comment: ageing potential of 5 to 10 years.
