Established in the 1960s in Saint-Euphraise by André Moreau, the brand Champagne André Moreau was taken over by his daughter Sylvie and her husband Olivier in the 1990s, giving rise to Champagne Sylvie Moreau.
Over the years, the estate has expanded to reach three hectares today. In the vineyards of Champagne Sylvie Moreau, the preservation of ancestral lands has always been the primary concern. Initially practicing sustainable viticulture for 25 years, the estate
has been certified organic since 2023. The philosophy at the estate is clear: “limit interventions and let the wines express themselves with barrel fermentation, especially for special cuvées.
Minimize racking and use as little sulfite as possible. Patience is the key”. The result is increasingly unique cuvées where the terroir fully expresses itself, with complex aromas, finesse, and fruitiness, and where ageing and subtle dosages allow for the
creation of gastronomic champagnes.
The Chardonnay Mono-Cépage cuvée comes from the Trélo sur Marne parcel, which is very steep, with loamy and deep soil, and an ideal exposure that provides a nice balance. Half of it is vinified in 228-liter Burgundian barrels and the other half in stainless steel tanks, with no fining or filtration. This Extra Brut, dosed at 1g/L, comes from the 2018 harvest and yields 480 bottles.
Color: pale gold, fine effervescence, lovely bead.
Nose: rich and complex, lively, with slightly toasted aromas. The ageing process is well controlled. One can expect a beautiful richness.
Palate: a lovely attack with impressively fine bubbles caressing the palate. Remarkable freshness and balance, with a beautiful texture. The finish is tense, long, and refreshing. Pairing: sole meunière; pan-seared scallops.
