Color: slightly cloudy yellow with green reflections. Nose: clean, with citrus, Timut pepper, rose petals and lychee. A note of reduction. Palate: clean attack, very pleasant, spicy (white pepper), with a slight bitterness and saline character. Good balance. Interesting acidity and minerality. Pairing: mullet ceviche with yoghurt, rose petals and lychees. Comment: an aromatic, fresh and spicy dry white wine. Cellaring 3–4 years.
