Color: golden yellow, bright, rich bubbles. Nose: hazelnut, flaked almond, honey, quince. Palate: nice, gentle attack, lovely gourmandise, lovely stone fruits. We find the quince note. Long, intense, elegant palate. Lots of character. Long and harmonious finish. Pairing: John Dory, Granny Smith apple, cucumber and emulsified white butter; tart Tatin. Comment: incredible, elegant wine. Power and balance are there. Age 5 years.
