The Côtes de Provence signed by Castel Estates & Vineyards

In 2000 the Castel family got a crush for this beautiful estate of 132 hectares in production, at the very heart of the Massif des Maures between Nice and Aix-en-Provence, a few miles off Saint-Maxime. Surrounded with forests, the estate is protected while benefitting from the sea influences. With a wealth of their experience of warm and dry climates the family managed to extract the very specificity of the terroirs of gravels and sandy clays thanks to adapted grape varieties and proper processing. With a true will to limit their impact on the environment, the family has implemented integrated farming which earned them the Terra Vitis certification in 2012.

In the cellars, after a careful sorting of the grapes harvested by night (for a better control of the temperatures), Château Cavalier vinifies by plot using indigenous yeast to preserve the typicality of each terroir. The elevage is done in stainless steel vats on the lees with stirring for some cuvées.

Grand Cavalier 2017,
Côtes de Provence rosé    

With a majority of Shiraz (57%) complemented with Grenache, Cabernet Sauvignon and Rolle in equal parts and a touch of Semillon, this cuvee will seduce you with its complexity. Opening up on aromas of red fruits and citrus it then develops towards floral and mineral flavours. This broad aromatic range turns it into a partner of choice for the gastronomy, making the perfect match as much with seafood and fish as with duck and veal!

Cuvée Marafiance 2017,
Côtes de Provence rosé

The Grenache is the king in this elegant and delicate cuvee. Combining fruity, floral, mineral and citrusy aromas, its complexity will lead you to a spicy finish with a mentholated touch. To enjoy Marafiance, choose a fish with season vegetable or dare a dessert like an exotic Pavlova and mentholated cream.
