Visual aspect: yellow slightly orangy colour. Quite fine bubble. Nose: complex, honey wax, honey, crystallized angelica, very ripe mandarin, hazelnut. Palate: moreish, elegant, rich, full of emotions, subtle, atypical, very harmonious. Superb finish. Match with food: pan-friedfoie gras with pears; fillet of veal with pistachios and button mushrooms. Comments: a magnificent balance.
