This vision has come to life with the creation of the Sensation range.
Sensation is the perfect union of La Galinière’s savoir-faire and cutting-edge technology: alcohol removal through vacuum distillation. This gentle process preserves everything that makes a rosé irresistible—its aromas, freshness, and fruit character—without the alcohol. Made from a selection of the finest Mediterranean grape varieties, these wines capture the expressive, well-balanced character of the region. It’s a beautiful creation from an estate already acclaimed for the freshness and aromatic intensity of its rosés.

The range features two complementary styles with distinct personalities. The still rosé, generous with exotic fruit and Provençal herbs, immediately evokes the warmth and sunshine of the South. The sparkling version, meanwhile, delights with citrus and red berry notes and a fine, lively mousse that awakens the palate. This is the challenge Castel Frères set for itself with the Néphalia range, which offers a tasting experience faithful to the elegance and complexity of traditional wine, while embracing new consumer trends toward greater moderation.
Inspired by the ancient Greek word Nêphô, meaning sobriety and clarity, Néphalia embodies a mindset, that of a new generation of wine lovers who wish to celebrate the vine differently, with respect for the terroir and the same sensory exactitude.
The Néphalia wines are, above all, French wines, crafted from emblematic grape varieties and vinified according to the highest standards. The Néphalia oenologists carefully select base cuvées for their balance and aromatic potential. Then comes the crucial step: dealcoholization using the Spinning Cone Column method, a highly precise vacuum evaporation process. Alcohol is separated from the wine, aromas are captured, then reintegrated. This expertise guarantees a 0.0% wine, free from added flavorings, with its original structure preserved.

The result is strikingly accurate. Each cuvée reveals the distinctive markers of wine. The Chardonnay shines with notes of coconut, white fruit, and vibrant freshness; the Cabernet Sauvignon displays silky tannins and hints of vanilla, red fruit, and subtle oak; the Rosé charms with red berry and candy notes; and the Blanc de Blancs sparkling cuvée combines fine bubbles with aromas of citrus and ripe pear. Balanced and less sweet than most alcohol-free wines on the market (25–30 g/l, or about 17 kcal per 100 ml), the range delivers pure, precise pleasure. Its promise is clear: flavor comes first. The packaging, elegant, modern, and reassuring, echoes classic wine codes, while the made in France label guarantees authenticity and quality.

Color: very luminous and clear with a pale salmon pink color and beautiful light coppery sheen. Fine and rapid bubbles.
Nose: a rather subtle nose but with a tempting fruit character of sweet red plum, red cherry compote, a hint of white-fleshed peach.
Palate: semi-sweet attack with a juicy acidity adding balance and a sense of freshness combined with a creamy presence of bubbles. The mid-palate shows sweet and ripe red plum, cherry and peach with a dry and clean finish.
Comment: with its deliciously sweet red fruit character this non-alcoholic sparkling wine could wonderfully complement a summer fruit salad with vanilla and peach ice cream.

Color: clear and bright with a pale straw color and light green sheen. Moderate-sized, energetic bubbles.
Nose: very pronounced and aromatic nose, with candied lemon zest, English candy, white blossom, exotic fruits like passion fruit and papaya, a hint of smoke and sweet spice. Quite exuberant nose.
Palate: light and fresh palate, with a juicy acidity and mild bubbles. The mid-palate has good freshness and bite with notes of crunchy Granny Smith apple, lemon zest and a rather brief and clean finish.
Comment: a fresh and light non-alcoholic sparkling wine with an exuberant exotic fruit character.

Color: very luminous and clear with a quite intense golden color and very light golden sheen. Small and fine bubbles.
Nose: expressive and aromatic, with a character of candied lemon and ginger, bittersweet orange and grapefruit, a hint of angelica root and yellow blossom honey.
Palate: very good freshness and bite on the attack with a zesty acidity combined with pleasant bitterness and creamy bubbles. Just a hint of sweetness adding substance. The mid-palate shows bitter grapefruit, candied ginger with a zest of pomelo bitterness on the finish.
Comment: a fresh and lively non-alcoholic sparkling wine with a distinctive character of bittersweet grapefruit and pomelo complemented by a spicy edge of candied ginger.

Color: brilliant and star-bright with a moderate golden color and a very light green hue.
Nose: generous and ripe nose with notes of spiced yellow apple, yellow peach and apricot, a hint of banana. Aeration reveals sweet spice like clove, a hint of butter, vanilla and caramel.
Palate: dry but with good ripeness of fruit on the attack, mild and rounded acidity, moderately structured. The mid-palate shows good density with ripe sweet peach, apple and apricot complemented by sweet vanilla, clove and creamy notes of caramelised butter.
Comment: a rather generous non-alcoholic Chardonnay with good ripeness of fruit, attractive creaminess and a sweet spice character.

Color: brilliant and crystal clear with a pale lemon-green color and moderately fine bubbles.
Nose: attractive freshness with moderately intense aromatics showing lemon zest, white peach, green pear and apple. Aeration reveals a delicate hint of creaminess, fresh cut herbs and rhubarb.
Palate: great freshness and sapidity on the attack with bright zesty acidity and a foamy mousse. Very good intensity and purity of zesty green apple, pear and juicy quince. The fruit character is fresh but with a balanced ripeness adding substance and weight. Clean and fresh finish.
Comment: a very pleasant and balanced sparkling de-alcoholised wine with great freshness and purity of fruit.

Color: clear and bright with a pale salmon pink color and a light coppery reflection.
Nose: subtle nose with notes of white pepper, ginger, supported by fleshy white peach, zesty pink grapefruit, rhubarb and wild strawberry. Aeration reveals a wisp of stoniness adding a presence of mineral character.
Palate: dry with a juicy and crunchy attack supported by zippy acidity within a light body. The mid-palate shows great freshness with zesty grapefruit, fresh strawberry and white-fleshed peach notes. A clean and precise finish.
Comment: a very fresh and crisp style of a non-alcoholic Rosé with attractive fruit character. Perfect for a sunny day at the beach or with a fresh tuna tataki with a bright ponzu sauce.

Color: clear and bright with an intense purple violet core and a light purple red rim.
Nose: intense, dark and spicy, with sweet black currant jam, blackberry and dark spiced plum. Hints of cinnamon, clove and black pepper, scent of roasted coffee bean and smoke.
Palate: dry and spicy attack with fresh acidity and slightly dry and astringent tannins. Moderately built with juicy dark fruit character of cherry, plum and cassis combined with sweet spices like vanilla, clove and cinnamon.
Comment: with its dark fruit profile, tannic structure and intense sweet spicy character this non-alcoholic Cabernet Sauvignon could complement a grilled saddle of elk with sweet spices and a red wine and blackberry sauce.

Color: clear and bright with an intense dark ruby core and a light purple red rim.
Nose: very fruit-driven nose dominated with sweet red cherry, red plum, crushed raspberry combined with sweet spices like clove and a hint of black pepper. Just a hint of smokiness and an earthy scent of wet black earth.
Palate: very good freshness and juiciness on the attack with a crunchy acidity and mild chalky textured tannin. The structure is rather light with fresh ripe cherry and plum combined with a peppery note and a delicate bitterness on the finish.
Comment: a light, juicy and fruit-driven non-alcoholic Merlot with a spicy peppery character, easy to enjoy.
