A nice acidity in the mid-palate, lots of freshness. Explosive finish, with citrus fruits (grapefruit, lime) and a certain minerality. Pairing: aperitif; crustaceans or shellfish; ginger fish tartare with a hint of lemon. Comment: age 5 to 10 years.
