Delicate oak, light toast and sweet spices. Palate: supple and refined, mature black fruits, with a fresh, saline and umami finish and a slight tang. Pairing: roasted sot-l’y-laisse (oyster cut of chicken) with honey-glazed butternut. Comment: a great success, a true gastronomic Champagne.
