Champagne Vautrain-Paulet
Visual aspect: pellucid and translucent, with a golden yellow hue.  Wonderfully fine effervescence.  Nose: superb aromas of dried fruit and still warm brioche. Palate: lively on the first taste.  Well-proportioned balance with a flavoursome, spicy finish.  Match with food: pike perch with virgin sauce (made with basil, lemon, tomato and olive oil).  Comments: a magnificent vintage.
